Eton mess is one of my absolute favourite desserts and probably the one I make the most because it is so easy to throw together, so delicious and feels slightly healthier to other desserts.
With the combination of mango and passionfruit, this is the perfect summer recipe and a great option for the Christmas menu!
Mango & Passionfruit Eton Mess
Ingredients:
300ml thickened cream
1 1/2 Tbsp of agave sugar or icing sugar
1 tsp of vanilla extract
1/2 cup of Greek or plain yoghurt
8 small meringues, broken in to chunks
2 mangoes
3-4 passionfruit (or passionfruit pulp)
Method:
- Whip cream with sugar and vanilla essence until nice and thick.
- Fold in yoghurt and broken up meringues.
- Peel one mango and cut in to thin slices. Peel and cut up the other mango and place in a blender. Blitz until you it becomes puree.
- Layer the mango puree in the bottom of four serving glasses. Half the meringue mixture and then layer on top of the mango puree in each glass. Repeat again, layering more puree and more meringue mixture.
- Top each glass with some of the finely chopped mango slices and passionfruit pulp.
- Serve!
