I LOVE banoffee pie. I have always loved it, particularly because I love every element of what makes up a banoffee pie– the cream, fresh banana, caramel and pastry with of course grated chocolate on top.
The thing is, Banoffee pie is really naughty. I know that sounds stupid, because let’s face it, most baking is naughty but Banoffee pie is REALLY naughty. That’s why I avoid making it, because if I make it I don’t just have one slice, I have three.
I recently bought a new cookbook made up of recipes from my favourite recipe site taste.com.au and this slice featured in it. I thought if I made this slice in to bite sized pieces it would make me feel better about eating three pieces and it kinda did!
It’s also easier to transport and share among friends than a normal Banoffee pie.

Banoffee Pie Slice
Ingredients:
1 1/3 cups of plain flour (190g)
1/3 cup of icing sugar mixture (60g)
125g butter, chilled, chopped
1 egg
2 tsp of iced water
3 bananas, cut in to thin slices
300ml of thickened cream, whipped
40g of dark chocolate, grated
Filling:
395g tin of sweetened condensed milk
50g butter
1/3 cup of golden syrup
Method:
- Preheat the oven to 200 c. Grease and line a square or rectangle baking tin with baking paper, allowing the sides to overhang.
- Place the flour, icing sugar and butter in a food processor. Blitz until the mixture resembles breadcrumbs. With the motor running, add egg and water.
- Process until pastry comes together like a dough and then turn out on to prepared pan. Using lightly floured hands, press pastry over the base of the pan. Bake for 18 minutes or until golden. Once you remove from oven, allow to cool to room temperature.
- Meanwhile, make the filling. Place the condensed milk, golden syrup and butter in a saucepan over medium heat. Stir gently until butter has melted and mixture is smooth. Pour over pastry base and bake for another 15 minutes or until golden. Cool for 15 minutes before putting in fridge for an hour.
- Remove from fridge and layer banana slices all over the top. Smooth whipped cream on top of the bananas and sprinkle grated dark chocolate over. Place in the fridge for another hour to set.
- Cut in pieces and serve <3
