Since becoming pregnant again, I have changed up my diet a little bit to make sure I am getting enough of the good stuff. Well that was after the 6 weeks of morning sickness where I couldn’t eat anything but carbs.
I’ve been totally off breakfast, which is usually my favourite meal of the day and for a while all I was having was oranges! Now I can stomach yoghurt and I made some chia pudding to mix in with it to give it a nutritional boost! It is yummy and really light on the tummy!
It’s also super easy to make and only contains 3 ingredients, which I never knew because I had always been a little bit intimidated by this interesting little concoction! I found this simple recipe on Oh She Glows and it was perfect. You do have to allow the mixture to set overnight for it to thicken up.
I layered mine here with Five:am organic vanilla bean yoghurt and topped with strawberries. You could also top with muesli, another other fruit, nuts, cinnamon etc.

Chia Pudding
Ingredients:
3 cups of unsweetened almond milk (I use organic Pure Harvest from Coles)
1/2 cup of chia seeds
2 Tbsps of maple syrup
Method:
1.Whisk all ingredients together in a bowl. Let sit for 10 minutes and whisk again to break up any clumps.
2. Cover bowl with glad-wrap and put in the fridge overnight.
3. Serve the next morning for breakfast with your favourite topping!
