It has been so long since I have baked something. Life has been so busy lately since the New Year so I haven’t been able to do my weekly bake but hopefully I can get back in to it now as things quite down.
Anyway, the guys at worked had noticed I hadn’t made anything for a while so one of them asked me to make a walnut brownie. I love a good brownie, and of course anything with chocolate in it means I am a fan.
I found this recipe on Taste and gave it a go and I won’t need another one. It is everything I look for in a brownie- super moist yet fudgy, and full of chocolate goodness. I also like big thick slices (not those flat-looking pieces!) so this was just perfect!

Chocolate Walnut Brownie
Ingredients:
200g dark chocolate,
125g butter, chopped
1 cup of brown sugar
2 eggs, lightly whisked
1/2 cup of plain flour
1/4 cup of self-raising flour
2 Tbsp of cocoa powder
1/2 cup of sour cream (you can use lite as well)
100g of dark or white chocolate, chopped
1/2 cup of walnuts, coarsely chopped
Method:
- Pre-heat your oven to 160 C. Grease and line a square cake tin with baking paper.
- Place the chocolate and butter in a saucepan over medium heat and stir gently until butter has melted. Remove from heat and allow to cool.
- Add the sugar and eggs to chocolate mixture and combine. Sift over flours and cocoa powder and mix together.
- Fold in the sour cream and then add chocolate and walnut pieces and gently fold again to combine.
- Pour mixture in to prepared pan and smooth out top.
- Bake for 30-40 minutes or until it bounces back when touched. Remove from heat and allow t cool completely before removing from pan.
- Cut in to squares and serve.
