Well it was my little man’s 4th birthday party yesterday and I still can’t believe that I have a four year old. Time has gone so fast and I know we always say that but with kids it just seems to speed up. Just a few nights ago I was going through his baby photos and videos and I was in tears just reminiscing on those beautiful moments. His chubby cheeks and infectious laugh that he still has.
I am so incredibly proud of that kid and yesterday just made me even prouder. I had all the kids parents just telling me how amazingly caring he was with his friends and although I know how caring he is, to hear it from others just made my heart even fuller (if that’s possible). He was making sure every child had their jelly and making sure they sat down to eat before he did. He squealed with excitement every time a new friend arrived, yelling their names and running to them for a hug and he made sure no one was ever left out from the fun. His maturity at four years old just astounds me and I cannot wait for him to become a big brother and install those values in him!
Anyway, I didn’t just come here to gloat about how proud I am because I have an awesome biscuit recipe to share with you that will be perfect for all your kids birthday parties to come. I scoured the internet for weeks leading up to Finn’s party to find a decent biscuit recipe firstly and then secondly a decent icing recipe that tasted just as good (which proved to be a lot harder!). As he was having a Batman birthday, I had already purchased a Bat cookie cutter and so I needed to create black and yellow icing that would set nicely and quickly. I also wanted something really simple that tasted nice and didn’t have a whole heap of crap ingredients because I didn’t want the kids ingesting unnecessary a whole heap of unhealthy ingredients like glucose or corn syrups, which the majority of them had. You’re going to be super happy with what I have found because they are ingredients you can find in the pantry and it is so quick to make. Double the recipe below to make enough for a few decorations and different colours.
As for the biscuit recipe, it is REALLY yummy and better than most I have tried. It reminds me of a gingerbread biscuit but without the ginger (if that makes sense). It’s deliciously golden and sweet and again really easy to make. Make sure you leave them to cool completely before icing.
It’s fair to say these biscuits were a hit with both the kiddies and the adults and were gone very quickly. They can be made in to an shape you desire and decorated as you wish with different colours! As you can see from the photos, my decoration is a bit messy as I was fluttering about doing all the preparation and wasn’t being patient but they still look super cute!

ICED BISCUIT RECIPE
Ingredients:
Icing:
1 cup of powdered icing sugar, sifted
1-2 Tbsp of milk
1 tsp of vanilla extract
food colouring/gel of choice
Method:
- For the biscuit dough, place the butter and sugar in a mixing bowl and beat on medium speed until pale and creamy. Add the golden syrup and beat well until combined.
- Transfer the wet mixture into a large bowl and sift over plain and self-raising flours. Add milk and mix everything together with a round-bladed cutting knife until the mixture comes together to form a dough.
- Turnout dough on to a lightly floured surface and knead gently until smooth. Cover dough with plastic wrap and put in the fridge for 30 minutes to rest.
- Preheat oven to 180 C and grease and line a cooking tray with baking paper.
- Use a lightly floured rolling pin to roll dough out to about 5mm thickness. Using your chosen cookie cutter, press in to dough and cut out your biscuits. Keep rolling out remaining dough until all of it has been used (you’ll make at least 12-15 biscuits this way).
- Bake in oven for 15 minutes or until lightly golden. Allow to cool for 5 minutes before transferring to a wire rack to cool completely.
- For icing: Sift icing sugar in to a bowl. Add 1 Tbsp of milk and the vanilla extract and combine until it forms a smooth but spreadable consistency. Slowly add your food colouring/gel until you reach your desired colour. If you find your icing is too stiff then add the other Tbsp of milk and whisk quickly with a fork. If it is too runny, add more icing sugar. It’s pretty versatile! If you are wanting white icing, omit the vanilla extract for an almond extract which is clear as the vanilla will change the colour of the icing.
- Grab a piping bag with a round nozzle and fill with the icing. Gently trace around your cookie with your chosen colour and design. Wait for the icing to set before adding a new colour to ensure it doesn’t mix!
