I posted this on my Instagram stories a few weeks ago and so many of you asked for the recipe so here it is. My husband has already asked for me to make it again and friends raved about it so we will take this as a very big win in terms of taste and it’s easy!
Easy Vanilla Slice
Ingredients:
2 sheets of frozen puff pastry, thawed
2 1/2 cups (625mls) of thickened cream
(I used normal cream and whipped it)
100g packet of instant vanilla pudding mix
1/4 cup (40g) of icing sugar
1/2 tsp of vanilla extract
icing sugar, for dusting
Method:
- Preheat oven to 220 C and line two baking trays with greaseproof paper.
- Place a pastry sheet on each tray and pick lightly with a fork. Score one sheet in to squares according to desired serving size. (score meaning lightly cut with knife)
- Place in the oven and bake for 10 minutes until pastry is puffed and golden brown. Remove from oven and press down slightly to flatten. Set aside to cool.
- Using an electric mixer, beat together cream, instant pudding mix, icing sugar and vanilla extra for approx 4 minutes or until smooth & creamy.
- Pile the cream on to the plain sheet of pastry, smoothing over with a spatula and top with scored pastry sheet. Refrigerate for an hour before serving to chill.
- Dust with extra icing sugar. Cut in to squares to serve!
