I absolutely LOVE gingerbread and wanted to find a healthier version so I could indulge in it more frequently.
I came across this recipe on Pinterest (of course) which led me to this beautiful website called Petite Kitchen and I have tweaked it to suit my preferences.
This loaf is refined sugar free, dairy free, gluten-free and oil free. The only dietary requirement it does not adhere too is Vegan as it contains eggs (or those with an allergy).
It gets it sweetness from dates and is so lovely and moist that it melts in your mouth. Then there’s the beautiful spices that fill the room as it is baking in the oven.
I do become sceptical anytime I bake something super healthy because it never tastes great. Like bearable but not amazing. This recipe changed my perception and it has since become a big favourite amongst family & friends who all ask for the recipe.
It’s so easy to whip up as well as you can just chuck everything in to the food processor and in to the oven. The only preparation is soaking the dates prior to baking.
This is a definite MUST make for those looking to eat better or simply need to break up the naughty stuff with something that doesn’t make you feel guilty.

Healthy Gingerbread Loaf
Ingredients:
2 cups of almond meal
5 free range eggs
1 cup of medjool dates, soaked overnight
1 Tbsp of apple cider vinegar
1 tsp of baking soda
2 Tbsp ground ginger
1 heaped tsp of cinnamon
1 heaped tsp of nutmeg
Method:
1. Firstly, soak your dates in boiling water for at least a few hours but ideally overnight to soften up.Drain well.
2. Preheat the oven to 160 C and line a baking tray with baking paper.
3. Combine all ingredients in a food processor and blitz until combined.
4. Spoon in to loaf tin and smooth out. Bake for 40mins or until skewer comes out clean.
5. Allow to cool slightly before removing to serve.
I love mine warm and on it’s own but it is also wonderful toasted with butter!
