So I made this like three years ago for some friends of ours at a Game of Thrones party (yeah, that’s right! We met up and watched it together ) and everyone raved about it.
I have made it several times since and again last week. As most of you know, I am a chocolate addict and mousse is seriously one of my favourite desserts although I always love to have it with something else as well, whether it be fresh fruit, or on a cake.
I really love the addition of hazelnuts in this recipe because not only does it add a wonderful flavour but it also gives it a bit of texture.
Top it with fresh raspberries (the best combination) to break the sweetness and grated white chocolate and you have a winner dessert! Enjoy.
Chocolate Hazelnut Mousse
Ingredients:
150g milk chocolate
150g dark chocolate
300ml of thickened cream
3 eggs, separated
1/3 cup of hazelnuts, finely chopped or crushed
2 Tbsp of caster sugar
grated white chocolate & raspberries for serving
Method:
Melt chocolate together in a heatproof bowl on a pot of simmering water, stirring gently with a spoon until it’s melted. Set aside to cool slightly.
Mix in egg yolks to chocolate mixture.
Beat egg whites until soft peaks form. Sprinkle caster sugar over top and continue mixing until glossy and thick. Fold in to chocolate mixture in two batches.
Beat cream until soft peaks form. Blitz hazelnuts in good processor until they resemble crumbs or alternatively chop finely. Fold cream and hazelnuts in to the chocolate mixture.
Spoon mousse in to a bowl or serving glass. Put in the fridge and allow to set for a few hours before eating.
Garnish with raspberries and grated chocolate! Yum!
