I’m really excited to share this recipe with you guys because I make it every weekend for the working week ahead and they are delicious!
Recently I embarked on a 6 week challenge with my club The Hiit Factory. As part of our challenge we followed a Rock Your Body food plan with some really awesome healthier meal and snack ideas that have become part of our weekly meal rotation.
These muesli bars are very easy to make and when you think of the crap added in to most store bought bars, it’s a no brainer to make your own. There are a tonne of superfoods including goji berries, flaxseed and pepitas. They contain no refined sugar, are dairy-free, yeast free and could be gluten-free as long as you choose gluten free oats (my coeliac sister ate them with no problems!).
The ingredients do add up but if you buy in bulk it works out much cheaper and they last me a week!

Healthy homemade muesli bars
Ingredients:
Dry ingredients:
1 cup of oats
1/2 cup of crushed almonds
1/2 cup of crushed cashews
1/4 cup of chia seeds
1/4 cup of pepitas
1 Tbsp goji berries
1/2 tsp cinnamon
Wet ingredients:
2 Tbsp almond butter
1/2 cup of rice malt syrup
1 tsp of vanilla extract
1 Tbsp of flaxseed meal
Dark chocolate for drizzling on top
Method:
1. Preheat oven to 180 C and line a square baking tray with baking paper. Combine all the dry ingredients in a mixing bowl.
2. Combine the wet ingredients in a small saucepan over low heat until the almond butter has melted and the ingredients have combined together to form a thick syrup (keep an eye on it as it will only take a few minutes)
3. Pour the wet ingredients in to the dry ingredients and mix together well.
4. Bake for 20-25 minutes or until golden brown. Let cool.
5. Melt dark chocolate in a heatproof bowl over a pot of simmering water. Drizzle over the top of cooled muesli bar. Put in the fridge to set.
6. Use a serrated knife to cut in to bars. Eat!!
