I have made the slice several times now and every time it is an absolute winner! It offers something a bit different from the usual slice you would find at your local cafe and it is extra delicious. This week I made a batch for work and everyone devoured it going back for seconds and thirds.
I love that the recipe is no-bake, really easy to put together and looks pretty. It is the perfect bake stall treat or afternoon tea recipe. It is very indulgent though so you might want to cut your slices a little smaller than mine (because I am greedy!)
When I first tried it, it reminded me of a white chocolate Kit Kat bar with the crunch from the maltesers and the rice bubbles and that delicious layer of white chocolate on top. I like it best kept in the fridge and served cold!

Malteser slice
Ingredients
250g plain sweet biscuits (marie, milk arrowroot, granita etc)
2 cups of rice bubbles
125g butter
2 Tbsp cocoa
180-200g bag of maltesers, cut in half
400g tin of condensed milk
200g white chocolate (you may need more depending on tin size)
Method:
1. Line a slice tin with baking paper.
2. Place biscuits in bag and crush with rolling pin until they resemble fine crumbs or blitz in food processor if you have one. Pour in to a large bowl and add rice bubbles and half of the chopped maltesers.
3. In a saucepan over medium heat, add the butter, condensed milk and cocoa together. Whisk until melted together and smooth.
4. Pour over dry ingredients and mix until well combined. Press mixture in to tin.
5. Break white chocolate into pieces and put in microwave-safe bowl. Heat in 30 second bursts in microwave, stirring each time, until chocolate has fully melted.
6. Pour melted chocolate on top of slice and smooth out. You may need to melt more white chocolate to cover it all depending on your tin size and how spread out it is. Press the remaining maltesers in to the chocolate.
6. Refrigerate until set (about 2-3 hours)
Store in fridge for up to one week.
