It was my brother’s 23rd birthday today. That’s how old I was when I had Finn, which seems surreal now that I had a baby at his age because he still is a big baby himself! ha. I told him that too and his response was that he needs to get himself a lady soon because he didn’t want to be single by 30. haha.
It’s weird because I look a Luke (my brother) and couldn’t imagine him being a father at this age because he is still so young yet I didn’t feel young when I had Finn. I guess having a baby made me grow up a lot quicker but I have always been an old soul. I probably grew up a lot quicker than I should of and I guess that made me mature much faster than others my age.
Anyway, back to this beautiful recipe.
My brother isn’t a fan of sugar. Somehow he missed out on the sweet tooth gene in our family because us Lamont women love out treats! He will never eat dessert and it is a mission getting him to try my recipes! How excited was I when I received a text from him this week requesting a cake!! Well it was a strawberry cheesecake but it was dessert! Immediately I started doing my research and found this stunning recipe for strawberry semifreddo cheesecake. This is a no-bake cheesecake and is served semi-frozen, much like what you would buy from the supermarkets but wayyy tastier. I am so impressed with this recipe, not just because it of how good it tasted but of how good it looked as well. It was so pretty! Everyone demolished it up including my brother!
Preparation for this cheesecake is so easy and you can do it all in your food processor before putting it in to your freezer to set. The only pain is washing and re-drying the processor for the three different steps but otherwise it is so simple. I used store-bought custard for this one because I didn’t have enough time, but next time I will make that from scratch as well. You could also try with all cream cheese (500g) instead of the marscapone if you have trouble finding it or it is too expensive.
This recipe is such a crowd pleaser and one of the scrummiest cheesecakes I have ever had. Make it for your next gathering, I guarantee it will impress! x x x
Strawberry Cheesecake
Ingredients:
400g strawberries, hulled
150g caster sugar
200g plain sweet biscuits such as granita, digestive,marie etc
100g unsalted butter, melted
250g marscapone
250 light cream cheese
300ml of fresh vanilla custard
1 tsp of vanilla extract
Method:
1. Process 250g of the strawberries and 100g of the caster sugar in a food process until smooth. Set aside.
2. Grease and line a cake tin (about 20cm) with baking paper.
3. Put biscuits in food processor and blitz until finely crushed. Add melted butter and mix together. Press in to the bottom of prepared tin. Put in fridge to chill for 15 minutes.
4. Put marscapone, cream cheese, remaining sugar (50g), vanilla custard and vanilla extract in processor and blitz until smooth and creamy.
5. Pour filling over biscuit base. Drizzle reserved strawberry sauce over the top and use a skewer to swirl it through to produce a marbled effect. ( You can also use a spatula to twirl it through a bit easier)
6. Put it in the freezer for 3 hours or until fully set. It should be semi-frozen.
7. Transfer to the fridge 30 minutes before serving. Garnish with remaining strawberries.
