I ate a lot of banana bread during pregnancy. A lot. They were mostly from cafes and they were always different. Some were good, some not so good. I made a couple of my own and they were good too but nothing, not even cafe style, has lived up to this recipe! The best thing about it is it is soo easy to make and it is beautiful! When I took my first bite I couldn’t believe how moist and deliciously sweet it was with a hint of cinnamon. Normally Chance takes the rest of my baking to work with him after we’ve had some but this morning when he asked I said no way! I’m keeping this banana bread here to eat for days!
The recipe is for just basic banana bread which I love but if you want to spruce it up a bit you can add walnuts/pecans or some berries or coconut!

Banana Bread
Ingredients:
1 cup of plain flour
1/2 cup of self-raising flour
1 tsp cinnamon
1 cup of brown sugar
2 large ripe bananas (3 small)
2 eggs
125g butter, melted and cooled
*Optional extras
Walnuts & shredded coconut
Method:
1. Preheat oven to 180 C. Grease and line loaf tin. The smaller you use the more rise you’ll get.
2. Sift flours and cinnamon together in large bowl. Add sugar and stir to combine.
3. Melt butter and set aside to cool. Meanwhile mash bananas until puréed consistency with a few lumps for texture!
4. Whisk melted butter, eggs and banana together. Pour into dry ingredients and fold mixture until just combined.
5. Pour into tin and spread out evenly. Top with some sliced banana, walnuts and shredded coconut if you want to make it a bit fancy or leave it as is!
6.Bake for 45mins. Test with skewer and if it comes out clean it’s ready!
