Muffins would have to be my most favourite thing to bake and eat because there are so many different delicious flavours and they always leave your house smelling amazing!
However, they can be the hardest to bake because you have to get the right consistency, texture and balance of flavours. I got this recipe from my dear friend Wendy in New Zealand and they have been very popular in our house. I have just whipped up two batches for my Mother’s Group today as well! You simply just throw all the ingredients in together and bake. Could it be any easier??? Enjoy!!
Banana Choc-Chip Muffins
Ingredients:
3 ripe mashed bananas (or 2 large)
1/2 cup sugar
100g melted butter
1 egg
2 Tbsp milk
1 1/2 cups of flour
1 tsp baking powder
1 tsp baking soda
1 cup white choc buttons (or you can use milk/dark chocolate as well)
Method:
1. Heat oven to 160 C fan bake or 180 C normal bake. Grease a muffin tin or line with cases.
2. Mix all ingredients together.
3. Bake for 20-25mins until golden and springy to touch.
