So Chance made me pancakes for Mother’s Day (on behalf of the kids of course!) and they were absolutely delicious. He knows I love a fluffy thicker pancake (not a crepe!) and these were everything I could have asked for.
Perfectly light and fluffy and about a cm thick (I could even go thicker!).
He found the recipe on the All Recipes website with over 13k reviews and for good reason. These are definitely the best we have ever made.
Really easy to prepare but you must follow the recipe to get the best result. The recipe below is actually double the original because we need to feed a family of four and that gave us about 8-9 pancakes. You can half the recipe if it’s just one or two of you.
I made them again last weekend and I feel like these will definitely become a Sunday tradition in the Morris family household.

Fluffy Pancakes

Method:
- Combine the milk and vinegar in a medium sized bowl and put aside for 5 minutes to sour (it will curdle slightly).
- In another bowl, add the flour, sugar, baking powder, baking soda and salt.
- Whisk the eggs and melted butter in to the milk. Pour wet ingredients in to the flour mixture and whisk until smooth. If your mixture is too thick, add a little water to get it to a pourable consistency.
- Heat a large frypan (we have a great pancake pan if you can find one!) over medium heat, and coat with cooking spray. Pour 1/4 cupful’s of batter onto the pan, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.
- Serve with your favourite ingredients. (Whipped cream, berries and maple syrup for me!)
