On my endeavor to cut down on sugar in my diet I have become addicted to everything vegan! There are so many vegan treats out there these days that it would almost be easy to become a vegan, except, well, I love meat and I love dairy. However, replacing some of my chocolate binges with something that tastes as good as it but is packed full of natural ingredients, and no refined sugars, well that’s a win-win yeah?
I stumbled across this blog on my hunt for recipes and it is amazing. Oh She Glows is hosted by a vegan lady called Angela and ALL her recipes look incredible. She has won awards for her cookbooks. This is my second recipe from her which included the raw almond butter cups earlier in my posts which were delicious! I’m sure I will be trying many more recipes from her in the future.
For now, let me introduce to you this little beauty. I have made this twice already this week and I already know the recipe off by heart! It is super easy to make as you just chuck everything in a bowl and mix.
The fudge itself is delicious and sweet. A great alternative to chocolate if you’re trying to be healthy. I love the crunch of the rice bubbles, which gives the fudge a great texture. Just make sure you keep it in the freezer as it will melt if left out.

Vegan Carob Almond Fudge
Ingredients:
1/2 cup of virgin coconut oil, melted
1/4 cup of natural almond butter
1/2 cup of gluten-free rice bubbles (found at the supermarket)
1/4 cup of carob powder (found at health stores), sifted
1 Tbsp of cocoa powder, sifted
2-3 Tbsps of rice malt syrup (or other sweetener)
1 tsp of vanilla extract
pinch of salt
Method:
1. Line a small loaf tin with baking paper.
2. In a mixing bowl, add all ingredients and mix together until combined.
3. Pour in to prepared tin and put in the freezer until set. Cut up in to squares to serve.
NOTE: I double the recipe to make my fudge extra thick, as seen in my photos!
