Everyone loves a cookie!!! (but just remember it is a sometimes food!).

I craved cookies in my first pregnancy with Finn and I would make these every week and take them for lunches for afternoon tea (clearly, I forgot about the sometimes food part but I’ll blame it on preggo brain)

Whenever I see white chocolate in a recipe I’m attracted to it straight away, firstly because I love white chocolate and secondly because it compliments other ingredients so well. Macadamia nuts are another one of those awesome ingredients that works really well in baking and the combination of them both together is just wonderful.

These cookies are really easy to make and soo delish! The come out crisp on the outside and soft (but not too soft) in the middle (my perfect cookie!). They have become extremely popular amongst friends and family and some people say they remind them of the Subway cookie, only better!

Note: this recipe makes about 24 cookies so you can halve it if you don’t want that many.

White Chocolate & Macadamia Cookies

Ingredients:

250g butter, softened
1 cup brown sugar
1/2 cup white sugar
2 tsp vanilla extract
2 eggs
2 1/2 cups plain flours
1 tsp baking powder
1 cup chopped macadamia nuts
180g white chocolate, roughly chopped

Method:

1. Preheat oven to 180 C and line three baking trays with baking paper.
2. Beat butter, sugars and extract until light and fluffy. Add eggs one at a time, beating well after each addition.
3. Sift flour and baking powder over mixture. Mix together until combined. Add chocolate and nuts. Combine.
4. Spoon tablespoon sized balls on to tray. Flatten with fork if you want a thinner biscuit.
5. Bake for 15minutes or until lightly golden. Leave to cool on tray for 5 minutes before moving to wire rack to cool completely.

These cookies will spread so space out on the trays.
