I first made this blondie a few years ago for a friend’s baby shower and it was hugely popular. I have since made it several times for other events including Finn’s day care fair and of course for my own enjoyment.
A blondie for those who don’t know is similar to that of a brownie but is much more dense and moist. It is so easy to make and is so delicious! White chocolate and raspberry together are a match made in heaven.
This would make the perfect treat for a morning or afternoon tea get together due to the simply ingredients, easy method and of course scrumptious taste!

White Chocolate & Raspberry Blondie
Ingredients:
125g butter, cubed
200g white chocolate, chopped
1/2 cup of caster sugar
2 eggs
1 1/4 cups of plain flour
90g of white chocolate buttons
1 cup of frozen raspberries, defrosted
Method:
1. Pre-heat oven to 180 C (160 C fan-forced) and grease and line a square cake tin or slice tin with baking paper.
2. Place butter, first amount of white chocolate (200g) and sugar in saucepan over low heat. Stir until sugar has dissolved and chocolate is melted. Place in a bowl and set aside to cool for 10 minutes.
3. Beat in eggs and mix well. Add flour and the remaining white chocolate and mix well. Fold in raspberries.
4. Bake for 45mins or until firm to touch.
Eat!!
