HOLY! This quirky twist on the traditional rocky road is so delicious and I have already made it several times for numerous different occasions including for the kid’s birthday spread. It is always such a hit and the first thing to go with everyone asking me for the recipe.
The addition of cranberries and pistachios to this slice is a welcome one! They give it such a unique, delicious twist. Plus, white chocolate is always amazing.
It’s also an awesome gift to send out to friends and family at Christmas time if you want to do something small. The only preparation involved is a bit of chopping and mixing and then you chuck it in the fridge to set. No baking, no fussing. Just a really easy and super delicious recipe.

White Chocolate Rocky Road
Ingredients
250g of pink and white marshmallows, halved
2 x 200g blocks of good-quality white chocolate, chopped
100g of dried cranberries
110g packet of macadamias, roughly chopped
60g of pistachios, chopped in half
1/3 cup of desiccated coconut
Method
1.Grease and line a square tin with baking paper.
2.Combine marshmallows, cranberries, macadamias, pistachios and coconut in a bowl. Mix together.
3.Place white chocolate in a microwave-safe bowl and heat on high in 30 second bursts, stirring each time until melted.
4.Pour chocolate over marshmallow mixture and quickly mix together.
5.Pour in to prepared tin and smooth out with a spatula.
6.Put in the fridge to set for at least 2 hours. Use a warm knife to cut in to slices. Enjoy x
